Peaches and Cream Waffles

Batter:

  • 1 egg
  • 3 tbsp vanilla cashew milk (or milk of your choice)
  • 2 tsp vanilla extract
  • 1 tbsp melted ghee (or butter, or coconut oil)
  • 1 tsp coconut sugar
  • 2 tbsp oat flour
  • 2 tbsp gluten-free all-purpose flour (or flour of your choice)
  • 1/2 tsp baking powder
  • pinch of fine sea salt
  • 1/4 tsp ground cinnamon

Pecan Praline Sauce:

  • 1 tbsp Purely Pecans Gimme Some Sugar pecan butter
  • 1 tbsp maple syrup
  • 2 tsp melted buttery coconut oil (or melted ghee)
  • 1/2 tsp vanilla bean paste
  • 1/4 tsp ground cinnamon
  • pinch of fine sea salt

vanilla yogurt for topping
1 sliced peach for topping

Instructions

1. Preheat your waffle iron.
2. Mix all the batter ingredients together + spray your waffle iron with all-natural cooking spray, then pour the batter onto the iron.
3. While that cooks, mix together all the praline sauce ingredients in a small microwaveable bowl. Microwave it for a few seconds, until it reaches a thinner consistency.
4. Top the waffle with the praline sauce + the peach slices + a drizzle of vanilla yogurt.
