Paleo Pecan Pie Bites

Snacking made simple! These no-bake Paleo Pecan Pie Bites are like dessert without any of the guilt! With 5 ingredients and minimal prep time, they're easy as pie! 


Makes about 15 bites

  • 1/2 cup pitted Medjool dates, packed (5-8)
  • 1/2 cup Purely Pecans Sweet Potater Pecan Butter 
  • 1 1/2 cups unsalted, South Georgia Pecan roasted pecan halves 
  • 1 teaspoon pure vanilla extract 
  • 1/4 teaspoon salt 


  1. Add dates and pecan butter to a food processor. Blend until you get a sticky and crumbly mixture, similar to wet sand. This will take about a minute. Scrape down the sides of the processor as needed.
  2. Add in 1 cup pecans, vanilla and salt. Blend until the pecans are fully-mixed in.
  3. Add in remaining ½ cup pecans. Pulse a few times until incorporated and pecans are chopped, with medium-small pieces still visible.
  4. Pour mixture into a medium bowl. Press down on the mixture until it's tightly packed and is dough-like.
  5. Scoop about 2 tablespoons of the mixture into your hands. Roll and press into balls. Refrigerate for 2 hours before serving.
